Pancake Recipes

Apple Cinnamon Pancakes
1 1/2 c. milk
2 eggs
1/3 c. solid shortening
1 1/2 c. flour
2 1/2 tsp baking powder
1 tsp. salt
1 tsp. cinnamon
2 medium apples (quartered)

Directions:  Put all ingredients in blender.  Cover and "mix" until apples are finely chopped.  Pour on griddle.


German Pancakes
3 eggs
1/2 c. flour
1/2 c. milk
2 TBSP butter
salt, cinnamon and vanilla to taste

Directions:  Melt butter in 9" pie dish.  Add & mix all ingredients.  Bake @450 for 10-15 minutes.  Serve with fruit syrup (below) and powdered sugar, or fresh fruit and whipped cream.


Fruit Syrup (via my friend Heidi)
1 c. sugar
2 TBSP cornstarch
1 c. water
1 c. berries (fresh or frozen)
1 TBSP butter

Directions:  In saucepan combine sugar and cornstarch, add water and get to a boil.  Boil 3 minutes, stirring constantly.  Stir in fruit.  Reduce heat and simmer 8 minutes.  Take off heat.  Stir in butter.  YUM!!!


Overnight Wheat Pancakes (sugar free and delicious)
Day 1
3 1/2 c. buttermilk or keefer
1/4 c. olive oil
2 tsp. vanilla
2 c. grain (i.e. wheat or barley)
1 c. oats
Directions:  Blend until thick.  Let sit in blender overnight.

Day 2
Add 2 eggs
Enough liquid to get vortex going in blender.
2 tsp. salt
4 tsp. baking powder
1 tsp. baking soda

Serve with strawberries and whipped cream (or syrup, but it defeats the sugar free part of these pancakes).
